About me! I’m Ives Szclar, business administrator and industrial designer by profession, sommelier, chef and creative by conviction. Actually, president of the national sommelier’s organization of Mexico City, and founder of my own company Wine not? Dedicated to make unique and original experiences and travels with wine. Always restless and in the hunt for new and exiting adventures.

Details about the accommodation! We Will spend the nights in a quiet and comfortable hotel in Ensenada, where we can, if we still have energy, go clubbing all night long. It's 5 blocks from downtown and all the party action, walking distance to restaurants, bars, drugstores, etc. The travel is based in a double occupancy room. Do you have a question about the trip? Ensenada

Day 1-5
First day we will arrive to Tijuana and on the way to Ensenada we will stop at Rosario for the famous lobster and beans tacos, which are iconic of the region, pairing with a great white Mexican wine.

Santo Tomás

Day 5
We will drive to the Santo Tomas wine cellar for a unique experience where you’ll visit the vineyards, taste and pairing to finish making your own wine ensemble in the cellar accompanied by a light and classical music effects. After that we will go to Altotinto, one of the most representatives wine cellars from Mexico were Laura Chiapiela (Uruguayan enologist) or her Husband (owner) will receive us. After that we will return to Ensenada to have dinner in the best local food restaurant Ophelia, where you cant taste the exquisite and unique bluefin tuna.

Guadalupe

Day 5
On the third day we will have breakfast in the iconic fish tacos “La Guerrerence” recommended by Anthony Bourdain like the “spirit of Ensenada”. After that we well head to the vineyards where we could be receive by the owners o enologist of Domecq, flying wines, Norte 32 or Valle girl vino, to end up having dinner in the spectacular winery Alximia with the owner and winemaker Alvaro.

Day 5
Next day well have breakfast in La Avioneta and will taste its original fish brood with his ceviche’s bar, clamatoes bar and beer bar. After that well continue our visits to the vineyards to end up on Fauna, recognized as one of the best 100 restaurants in the world to have their special “festin” dines which includes 5 courses paired with 5 wines and each course has 3 different dishes.

Day 5
Last but not least we will endo our winery’s tour in F. Rubio and his unique wines made out of different grapes like palomino fino, and after that we will head up to Tijuana to have our flight back to Mexico city.
