The dry season is at its peak, the weather is sunny and warm without the heavy humidity of later months, and skies are clear; perfect for boat trips, cycling, and long days outdoors. This trip is intentionally timed to begin just after the Tet (Lunar New Year) holiday period, so shops, markets, and restaurants are all open again, life has returned to its full rhythm, and the country is in a particularly beautiful state: relaxed, festive, and still glowing from the celebrations. It's also a wonderful time to be in the Mekong Delta. The waterways are full but calm, the fruit harvests are in full swing (mangoes, jackfruit, star apples, pineapples), and the birdlife in the region's wetland reserves is at its most active. Hop on the back of a vintage Vespa with a local rider and zip through Saigon's neon-lit backstreets, stopping at five legendary street food spots where you'll try Vietnamese steamed rice rolls, banana sticky rice, Vietnamese beef stew, sugar can juice, lemongrass grilled beef, an optional Saigon beer, Vietnamese baguette, Vietnamese pancake, Vietnamese pizza, and Vietnamese dessert tray. Note: this is a shared small-group tour, not private. Return to hotel around 9:00 PM for a free evening. Boats are stacked high with pineapples, dragonfruit, and pumpkins; vendors are swapping breakfast bowls of hủ tiếu from boat to boat. Continue to small canals, a rice noodle workshop, and a fruit orchard. Alternatively, enjoy breakfast and a free morning relaxing at the hotel to swim, read in a hammock, or explore independently.

Free afternoon — We'll return to the hotel with some time to have lunch, rest, or refresh. Those joining the afternoon activity will meet in the lobby Bicycle Through Villages w/Locals [Optional afternoon add-on: $37/€33] — Bicycle Through Villages Tour (3-4 hours). Pedal at a gentle pace through coconut-shaded lanes, past stilted homes, family altars, and playing children. A beautiful way to feel the rhythm of delta life. We'll return to the hotel for a free evening to relax and have dinner on your own at your pace. DAY FIVE: Wednesday - Onward to Trà Vinh Early included breakfast at the hotel. 8:15 AM — Meet in the lobby to check-out. 8:30 AM — Our private taxi will pick us up and drive us to Trà Vinh, a quiet province where Khmer, Vietnamese, and Chinese cultures have lived intertwined for centuries.

Around 11:30 AM — Arrive at Thala Trà Vinh. Our home for the next three nights is a collection of thatched bungalows set among ancient trees, lotus ponds, and birdsong. We'll have lunch (own expense) at the resort restaurant, then settle into your bungalow with some free time to unwind. Free afternoon — Explore the grounds, rest, swim, or take a slow walk through the surrounding countryside. Evening — We will reconvene for an optional dinner (own expense) together at the hotel restaurant then have a free evening to relax. Day 6 — Thursday: Cầu Kè & the Magic Coconut Included breakfast at the hotel. 7:30 AM — Meet in the lobby for our included tour to collect bikes and connect with our guide.

Cycle through fruit orchards and quiet villages, visit a beautiful Khmer pagoda where saffron-robed monks chant the morning sutras, and continue to a family-run coconut plantation to learn about dừa sáp, the rare "magic coconut" found almost nowhere else on earth. Taste the soft, jelly-like flesh straight from the shell.

We'll return to Thala by 11:30 AM and have about 30 minutes to freshen up. 12:00 PM — Meet at the hotel restaurant for our Traditional Mekong Meal Lunch that they will have prepared for our arrival with fresh river fish, fragrant herbs, and Khmer-Vietnamese specialties you won't find on tourist menus. Free afternoon and evening — Nap in a hammock, swim, take a sunset walk through the rice fields, or borrow a bike and explore. Have dinner on your own at your pace. DAY SEVEN: Friday - Trà Vinh Town & Sacred Pagodas Included breakfast at the hotel. 7:45 AM — Those joining the optional tour will meet in the lobby. Alternatively, enjoy a free morning.

8:00 AM — Our private taxi will take us on a 45-minute drive into Trà Vinh Town. 8:45 AM — Private taxi to Ba Om Pond, a sacred Khmer site fringed by enormous ancient trees with otherworldly exposed roots. Rent bikes and cycle to Ăng Pagoda, one of the oldest and most ornate Khmer temples in the delta. Continue on to Hang Pagoda which is known as the "Cave Pagoda" where resident monks share the grounds with hundreds of storks who return each evening to roost. We'll return the bikes and walk to the town center for a leisurely lunch at a local restaurant (included in the add-on price). We'll take a private taxi back to Thala in the early afternoon.

Around 12:00 PM — We'll arrive at Amaya Saigon Boutique in District 1, in the heart of the old city, to drop out bags off. Take free time to grab a quick lunch nearby (own expense) before we meet up again. 1:15 PM — Meet back at the lobby for our included coffee experience. 1:30 PM — Hands-on Discovery of Vietnamese Coffee & Culture experience (until 4:00 PM). Brew with a traditional phin filter and taste your way through Vietnam's distinctive coffee styles from egg coffee to coconut coffee to salt coffee while learning the cultural history of how French colonial plantings became one of Vietnam's proudest exports. Then you'll enjoy a roasting viewing. After the coffee experience, we will head back to the hotel with free time to rest, freshen-up, and dress for the evening. 6:00 PM — Meet in the lobby to head to our dinner. 6:30 PM — We'll have our farewell dinner at a Michelin-listed restaurant celebrating refined modern Vietnamese cuisine. This is a fitting close to our shared journey through the south with heritage flavours, beautifully presented.
